Aromatic, crisp, and citrusy, with a pleasantly sweet marshmallow-esque flavor. Incredibly versatile, it’s equally wonderful in savory dry rubs or in baked treats.

Like many herbs, fennel has a long history of medicinal use. It is more unique in having a veterinary role: fennel was planted near kennels, and added dried to dogs bedding to ward off fleas.
